STRUCTURE OF ANIMAL AGRICULTURE

The structure of animal agriculture in China has been changing a
lot. The proportion of pork has been undergoing a process of uprising
and dropping and finally maintains at roughly 66% in 2002. After
forty year¡¯s fluctuation, the proportion of pork went back to the
same states as that of 1962. In the contrast, proportion of poultry
meat went into the opposite direction from dropping to uprising
while the ratio is 19.33% in 2002 that is still lower than that
of 1962. By the meantime, ratio of beef and mutton has been going
upward, but still far below that of pork and poultry meat. In 2002,
both ratios were still below 10% respectively. Total production
of pork, poultry meat, mutton and beef account for 98 % of the total
of meat production in 2003
